And if you don’t drink alcohol, we’ve also got a mocktail version of each drink for a tasty treat for all.

Cocktail of the Week: Aviation

If you’re celebrating something special this weekend, learn from the professionals over at Mixology Group with a lesson on how to mix an Aviation.

Hailing from the beginning of the 20th century, this drink is shaken and served straight up in a cocktail glass and with the help of some violet liqueur it turns a light blue hue reminiscent of the summers sky.

This drinks first appeared in print in 1916 and is accredited to Hugo Ensslin, who was the Head Bartender at the Hotel Wallick in New York City.

Essentially, Aviation is a Gin Sour that is made with Maraschino liqueur and Violet liqueur which add both floral and sweetness to the drink. The Maraschino is made from Marasca cherries which originate from the Dalmatian Coast and adds to this drink’s unique aroma.

Cocktail: Blue Smartie

First up, the Blue Smartie. Blue Smartie is the perfect treat for all you chocolate lovers out there. Creamy, chocolatey with a little kick. A decadent and sophisticated way to enjoy a grown-up sweet treat.

To give Blue Smartie the powerful colour blue, we use Blue Curaçao. Blue Curaçao liqueur is traditionally made with the dried peels of the laraha. Laraha is a bitter orange native to Curaçao, an island in the southern Caribbean Sea.

Bols (1652–1719), the creator of the world’s oldest distilled spirit brand, developed a laraha based liqueur after the discovery that an aromatic oil could be extracted from the unripe peel of the otherwise useless bitter oranges. Bols then had this oil exported back to Amsterdam to produce a liqueur like current day Curaçao.

He tended to add an "element of alchemical mystery" to his products, which explains the unlikely addition of a blue colouring to cocktails.

You can buy Blue Curaçao from supermarkets and alcohol shops, but if you’d prefer to create a DIY version at home, you could purchase some triple sec and add blue food colouring.
